Stahlman Pecan Cake

15 to 20 servings

1 pound butter, softened

2 cups sugar

6 eggs, beaten

1 tablespoon lemon extract

4 cups flour

1 1/2 teaspoons baking powder

4 cups pecan halves

2 cups canned, drained white grapes or golden raisins (optional)


Preheat oven to 300 degrees. Blend butter and sugar in a large mixing bowl. Gradually add eggs and lemon extract. Sift flour and baking powder 3 times. Add to sugar and eggs. Add nuts and grapes or raisins. Blend and put in a greased and floured angel food cake pan. Bake 1 1/2 to 2 hours. Cool 15 minutes before removing from pan. Cake is very dense.
