Green Chile Guacamole
Makes 3 cups
6 large ripe avocados
2 large ripe tomatoes, unpeeled and diced into small squares
1 teaspoon table salt, divided
1 large fresh lemon
2 dozen large New Mexico green chiles (hot), finely chopped
2 large cloves garlic, pureed
Salted blue corn, white corn and yellow corn tortilla chips
Follow each preparation step carefully so that ingredient flavors meld additively. Slice avocados in half, remove pit, scoop avocado from skin into bowl, mash avocados with fork. Blend 1/3 teaspoon salt into avocados. Blend 1/3 teaspoon saltinto tomatoes. Blend tomatoes into avocados. Slice lemon in half and squeeze juice (2 teaspoons) onto avocado mixture. Blend green chile, pureed garlic, and 1/3 teaspoon salt and stir into avocado mixture.
