Green Chile Meatloaf

2 1/2 pounds ground beef

1 yellow onion, diced

5 cloves garlic, minced

8 Hatch green chiles roasted, peeled and chopped

1/4 cup Dijon mustard

1/2 cup ketchup

2 tablespoons fresh thyme leaves

4 eggs

2 cups panko bread crumbs

Salt and freshly ground pepper, to taste

4 slices apple wood-smoked bacon


Preheat oven to 375 degrees. Combine ground beef, onions, garlic, chiles, mustard, 1/ 4 cup ketchup, thyme, eggs, panko and season liberally with salt and pepper. Mix by hand until mixture is homogenous. Form mixture into loaf on lightly oiled shallow baking pan. Brush outside of loaf with remaining ketchup and top with slices of raw bacon. Bake in oven until just cooked through. Remove and let rest for 10 minutes before cutting. At Santacafe we serve this meatloaf as a sandwich with chipotle aioli and Gorgonzola cheese on house-made semolina bread.
