Carne Guisada in Crockpot
9 to 10 servings
3 pounds lean roast (such as rump)
1 onion, chopped
2 large cloves garlic, chopped
1 (5-ounce) can green chiles
1 (14 1/2-ounce) can diced tomatoes with green chiles
1 (14 1/2-ounce) can diced tomatoes without green chiles
1 tablespoon cumin
1 tablespoon chile powder
1 teaspoon salt
Flour tortillas
Sour cream, salsa and garnishes, such as avocado
Place roast in Crockpot. Mix other ingredients and pour on top. Cook for 8 to 10 hours on low. When done, take roast out and shred, then put back in juices. Serve on warm tortillas with sour cream and garnishes. Can also be served over rice.
