Tequila Seared Mahi - Mahi
4 servings
2 tablespoons olive oil
2 cloves garlic, minced
6 slices thick bacon, cut in 1-inch pieces
Salt and pepper, to taste
4 fillets mahi-mahi, 1 inch thick
2 cups peeled, seeded and chopped tomatoes
1/4 cup tequila
1 tablespoon chopped fresh cilantro
Hot red pepper, optional
In an ovenproof sauté pan heat the oil over medium heat. Sauté the garlic and bacon until brown. Salt and pepper both sides of the fish. Add fish to sauté pan and sear until lightly browned. Add the tomatoes. Once heated, put m i xture on top of fish and add tequila and cilantro. Scrape browned sauce from bottom of pan. Reduce to low heat, cover and cook 15 minutes.
